This classic Mexican herb is earthy and pungent, with a flavor all its own. Compared at times to wild oregano, savory, or tarragon, epazote also has citrus or pine resin overtones. It has a practical side, too: it makes beans much more digestible. We love it for all its qualities in black beans and mole, and in classic Mexican dishes like calabacitas. We dry it carefully and grind it to a fine powder.
